A restaurant on this scale is no longer a single room but a set of linked spaces: seating, bar, kitchen with prep areas, storage and service zones, washrooms. Most of the work in projects of this size goes into zoning and into keeping guest and service routes apart.
At large floor areas a venue stops being a single room: several seating zones appear, along with a service loop, storage and staff areas. The main difficulty here is not the fit-out but the logistics between them.
