The format announced in the name implies meat cookery and, as a rule, an open grill. That sets the technical frame of the project at once: powerful extraction, heat-resistant finishes in the working area, and separation of cooking smells from the hall.
Several hundred square metres already allow the hall to be given different characters: a spot by the window, a spot at the counter, secluded seating at the back. Such differentiation is usually more useful than a uniform layout.
