In a coffee shop the plan is driven almost entirely by the counter: behind it the barista line with its services and refrigeration, in front of it a waiting area that must not block the way to the tables.
In small venues every metre of the hall competes with the production area, so the number of seats is usually whatever is left once the equipment is placed. The gap between tables and the route to the washroom are among the first things calculated.
