A cafe of this size is normally organised around three linked parts: the guest hall, the bar counter and the production area. How they meet each other decides both the route a guest takes to the table and the route a waiter takes with an order, which is why the plan usually matters more than the finishes.
Several hundred square metres already allow the hall to be given different characters: a spot by the window, a spot at the counter, secluded seating at the back. Such differentiation is usually more useful than a uniform layout.
