A bar lives in the evening, so in projects of this type the lighting and the counter are usually settled first: the counter sets the geometry of the room, the light sets its mood. Everything else follows from seating and circulation.
At large floor areas a venue stops being a single room: several seating zones appear, along with a service loop, storage and staff areas. The main difficulty here is not the fit-out but the logistics between them.
